Location
Hilly vineyards on chalk and flint soils south of Bergerac.
Grape Variety
Blend of Sauvignon (40%), Sémillon
(40%), Muscadelle (20%).
Winemaking Process
The grapes are harvested at their optimal maturity, after which
they go through a direct pressing or skin-contact maceration
process, and sedimentation at 5°C. The fermentation process
is temperature-controlled (12 to 18°C). When all the sugars
have been transformed, the wine is aged on fine lees, stirred and
aerated. It is then fined and filtered before bottling.

Tasting
At a cool but not chilled temperature (9-11°C),
it can be served with shellfish, seafood, and salads. It is excellent
with smoked fish (eel, salmon, etc.), grilled or in a sauce, or
as an aperitif in summer.
